Corn Chowder
8 slices bacon, diced
1 1/2 c. chopped onion
5 med. potatoes, diced
3 c. water
1/2 tsp. salt
1/4 tsp. pepper
2 cans whole kernel sweet corn
3-4 tbsp. flour
3 c. Half and Half
1 tbsp. fresh parsley
8 tbsp. butter (1 stick)
Cook diced potato’s until just fork tender and drain. Sautee onions and bacon in 4 tbsp butter until onion is browned a bit and bacon is starting to get crisp. Add potatoes, water and seasonings. Bring to a boil then turn down to simmer. Add corn, Half and Half and flour. Heat for about 5 minutes then add other 4 tbsp of butter. Continue to simmer for about 30 min on low heat stirring once in a while so contents doesn't stick to bottom of pot. Garnish with parsley and go to it.
