Thinking about running the crockpot off the inverter (setting in the sink)while going down the highway. Any hints?

I would make the meal ahead of time and refrigerate it; then microwave it to reheat once we stop.
Never have felt it was safe to run a cooking appliance while driving as too many safety issues and variables come into play.
