Most any leftover roasted or grilled meat or veggies can be used to make sandwiches. Wuvvv the chicken curry salad recipe above. You can also use chicken to make a stuffed pita sandwich with chicken meat, salsa, either from the jar or produce section, avocado, and salad greens.
Chop up some olives or buy chopped olive salad in the jar, open a can/pouch of tuna that you've doused w/ your favorite olive oil, onion slices, an anchovy filet or two if you like it, tomato slices, a lil basil pesto or fresh leaves all combined atop ciabatta bread roll or Italian bread. Put a weight on the sandwich if you've the time (CI pot; cans) if you've the time and eat. Also works nicely with chicken replacing the tuna.
2 or 3 thick slices of a nice sopressetta or your favorite hard salami, mixed with salad, olives, and cheese on a sturdy bread. Buying salami by the.........sausage is less expensive than the slice varieties and generally better tasting too. the harder the salmi the longer it lasts and tastes.

Thin boneless porkchops on sale at your end? Grill a batch, refrigerate, to use when needed and make a sandwich of it with your fav condiments.
