I just cooked a 2.5 pound eye of round in my sous vide cooker 24 hours at 132.
I coated it in dried Oregano, Basil and Garlic powder. The meat was infused with flavor.
It came out perfectly medium rare, juicy and so tender.
I have a Kitchen Basic meat slicer that works very well.
Sliced it thin for Sandwiches this week. $4.50 a pound.
As good or better than Boars Head.
