Yes a Jiffy is enough for a 10". A 10" DO is kind of in between the 12" and 8", but close enough to the 8" to work and it cooks a little quicker. In a pinch you can use Pioneer Biscuit mix. Add about a 1/4 cup or so of sugar, brown or white and some cinnamon to a couple of cups of mix. Pour the juice of the peaches, big can, in the DO, then the mix and put the peaches on top.
I've used spice cake mix several times. The only reason I don't use it more is that I just don't think ahead to cut it in half by weight for my smaller DO's.
I've made peach, canned cherries, pears and pineapple (mix the pineapple with some butter and brown sugar, taste like upside down cake) and most of the fruit pie fillings.
