Migas are delicious. Slice some corn tortillas into strips and fry in oil til crispy. Remove from pan, add a pad of butter, a small diced onion, a diced tomato and if you have it jalapeno diced.
When the onion is soft, add enough eggs for the family. Scramble together and serve the eggs on the tortillas. Then sprinkly the lot with cheese. Hubby adds salsa and I add tabasco.
We like oatmeal also and my new favorite is baking it in a mug. I use about a 1/2 cup of quick oats, a tablespoon of flax meal, 1 egg, 1/2 cup of milk, a 1/2 of a banana mashed, a half of an apple, cubed, a couple shakes of cinnamon, and a couple teaspoons of honey for each serving. Stir it up and nuke it for about 2 to 3 minutes. You can tell when its done.
Just had a "formal" avocado toast for the first time this past weekend @ the Winter Garden/World Financial Center. They set up a temporary ice skating rink and after a few rounds realised I was hungry and stopped in their food court. Grilled tuna, avocado and tomato confit. Yummmm! This is going into my regular roster and I wont need to pay $12.50 either, LOL.
