This sounds like a good easy option. You could even do the browning and seasoning of the meat at home. Put it in your frig or freezer. To rewarm take a couple of crockpots. You said you can use other campers kitchens, so put some of the crockpots in their units. Use crockpot liners for easy clean up. The only things I would add to the above menu list is a crockpot of queso and tortilla chips for the kids or adults to make nachos.
