I have done the Taco Bar for Teacher's Appreciation Luncheons. I do the meat ahead of time, recipe follows. For 5 lbs. ground meat:
Ground Beef (I use the 96% lean)
2-3 large yellow onions. chopped
2 large cans Ranch Style Beans (not sure of oz, but at least 28 oz. each)
2 pkgs of Taco Seasoning or. 1 Tblsp ground cumin; 1 Tblsp. Ground chili powder; 2 tsp. garlic powder (not garlic salt). 1 Tblsp salt and 2 tsp. pepper. (. This is pretty much what is in Taco Seasoning, I think there is also some dried onion in it, if you want to add it.
1/2 to 1 cup of water.
Brown meat, drain well; add chopped onions and cook till onions are translucent, do not brown. Add beans and seasonings. Add water, if too dry add more in 1/2 cup increments.
Can be done ahead and frozen.
Instead of taco shells, for large groups, I put out a large bowl of taco chips, then have bowls of chopped lettuce, tomato, green onions, sliced black olives, grated cheese, sour cream, guacamole, or chopped avocado, salsa.
This is easy to double, cut in half or for our family I use 1 lb. beef or ground turkey and use 1 tsp. each of the seasonings.
Chicken Taco Stew
1 roast chicken, cooled and boned. Chop in bite sized pieces
1 lg. onion, chopped
1 can black beans, undrained
1 can pinto beans, undrained
1 10 oz. pkg frozen corn
1 7 oz. can La Costeno or Herdez GREEN salsa
1 4 oz. can green chilies
1 14 oz. can diced tomatoes, undrained
1 pkg taco seasoning or 1 tsp each of cumin and chili powder, 1/2 tsp. of garlic powder, salt and pepper to taste.
1/2 cup chicken stock, or broth
Cook onion till translucent in a small amt of oil, Add everything else, stir and simmer for 30 minutes.
To serve: put out bowls of brown rice, I think the brand I use is the Uncle Ben's instant brown rice-takes 10 min. and is quite good. Next serve the stew, in a crockpot. For garnish, put out bowls of crushed tortilla chips, sour cream, chopped onion, grated sharp cheddar, and salsa.
Have served this at the Ronald McDonald House where I volunteer and it is always well received. Have even taken a frozen chicken along with all the canned goods and seasonings in my checked
luggage, goes together quickly and most folks really seem to like it!
