Cooking for that many out of a camper is a challenge. Careful planning and having the right items along will make all the difference. I'd want a higher power stove than the ones in the camper.
Last year I was part of a team of 4 that made roast pork, roasted potatoes, penne w/sauce, meatballs, bread pudding and maybe a couple other things for more than 800 (not a typo). But we had a large commercial kitchen and could handle something like 40 huge trays in ovens at a time. So handling 50 with multiple RV kitchens should be do-able.
