Food For Daytona 500?

I'm going to smoke some shrimp as an appetizer . never tried smoking them before, plenty of recipes in the net. Only takes a few minutes (20-30) Then we will have fajitas as the main course.

I've got a few types of shine already and have my PBR keg sitting at the store. I just gotta clean out my kegerator and chill it before taking the keg home....

Thanks NCWriter, good to know that I can do it this way. Easier to have the batter mixed before a rally, then just have to pop it in the oven and bake!

I too make this, but add 1 medium sautéed onion. It's great with any kind of BBQ.

Cornbread casserole

Ingredients
1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)

1/2 stick butter, melted
1 to 1 1/2 cups shredded Cheddar

Preheat oven to 350 degrees F.

In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

I make that one often, it's a keeper. Got the recipe from my sister- in- law, and hers had Swiss, rather than cheddar, and it was just mixed in with the rest. Think I'll give yours a try next time.

Good with grilled pork tenderloin. Great with turkey if you need to bring a dish on Thanksgiving...So easy.

Wood glue, I've mixed it the night before and covered with plastic wrap to bake the ext day, no problem.

SuperDave, The Rally is in 2 months!

I will play around with the recipe until then, seeing as having the oven on sounds like a good idea on chilly winter nights!

When are you going to the rally? you owe it to your taste buds to try it out before hand to see if over night has any affect on the leavening. It isn't yeast based so I wouldn't think there would be a problem. If the batter was in a bowl, I'd put saran wrap right on top of the batter to prevent it from getting any skin.
