We don't have a shortage of butchers and we have a couple of local chains that have counters. What we don't have are the national chains, with the exception of WalMart.
I just can't bring myself to buy a chub, log, tube, whatever they are called, because I have. The meat just doesn't look right. My dad was a grocery man and a butcher and while I don't remember much about what I should, I do remember the shouldn't.
We have a store here with a counter that grinds its own Boston Burger ( don't ask because I don't know ) that is 80% beef and 20% pork, rated 80/20 and it is outstanding for burgers and meat loafs.
