I am lucky to have a real butcher at home - he will grind your meat while you wait. Much harder to find real butchers on the road. I have an additional problem on the road - I travel solo in a 17' trailer with a 5 cu ft refrigerator (with a small freezer section). It is getting more & more difficult to find a meat department in a chain grocery store that will cut a small roast or provide single servings of most meats. Still, it is worth asking. a couple of Safeways I've stopped in have been willing to repackage or recut meat in sizes I can use. Others just give me a blank stare!
