HELP, HELP....our popovers are sticking in the muffin pan

DW is stumped. This is done at home not in the RV. First time in a special non-stick popover pan....they came out easy. Since then, it has been a hassle to get them out.

DW has been spraying Pam or something into the pan. Think we also used butter. Baking at 425 for awhile and than reducing to 325 degrees.

What is the secret to get the popovers to slide out of the pan?

  • That spray stuff gets goopy/sticky and can be difficult to wash out. Use oil or butter.

  • You might have a bad oven, my sister did. If it's gas oven call the gas company and have them check it out. I think your temp. is way to high at the beginning. I don't think I ever baked pastries at 425.

  • Baker's Joy works better than other non-stick sprays, because it also has flour in it.

    Wax Paper? I wouldn't want wax on my food, but Parchment Paper works very well in place of oil, butter or non-stick spray. Parchment is non-stick. I haven't found anything that will stick to it. It handles temps up to 425 without issue. Above that, it will brown a little.

  • Once in a while as I am watching TV I made hundreds of circles to fit in the bottom of the pans. Than I have to make sure I do not lose them. I fold the wax paper so I can cut out about six each time.
    I thought it was just my gluten free flours that make it necessary.
  • I am a chef, and at one point my career, I was the chef at The Swift House Inn in Middlebury, VT...I have made thousands of popovers. The best method, I have found, it's to pre heat the pans, then put a decent amount of oil our melted butter in the bottom of each cup. The hot oil makes them really pop and they won't stick. Not the healthiest, but tasty!
  • One failsafe method is to cut a piece of wax paper the size and shape of the pan bottom. It is how I do all my non stick cake pans and works very well as long as one doesn't allow the baked item to cool for too long on the pan. Has your DW been diligent about flipping the pan say within 10 - 15 minutes?
  • High heat renders most non-stick pans very sticky. That's my answer, google may have better ones.
