They have a few quirks, but not many and we've found they work well for 95% of our "stovetop" cooking.
They don't work very well for deep frying and the numbers don't appear to really coincide with temperature. The numbers do remain consistent though and once you get dialed in to what they mean for your needs they will remain the same day in and day out.
