My induction cook top can be set for watts or temperature. For example; set it for 250* and the pot will never get hotter than that.
It's 1300 watts max, which sounds like it's low power but isn't. I just deep fried some fish using a cast iron dutch oven and peanut oil. It took very little time to get the oil up to 350* and held at 350 with that temperature programmed in. Sweet! I didn't have to worry about the oil getting too hot or adjusting when the oil cooled off after adding the fish.
