Cutting the backbone out is really the definition of spatchcocking and yes it allows the bird to cook more evenly and faster:). I spatchcock almost every bird I grill and can tell you that your average chicken, Cornish hen, and duck can readily utilise a cheap pair of kitchen shears to do this but ya need a stronger, wider, knife like a meat cleaver or chef's knife to accomplish the same on a turkey since it has harder bones. - gc1966Explorer
