looking for electric skillet breakfast casserole recipe

Here is the issue: We camp with another family so there is anywhere from 9-11 people (adults and teenagers). If I was at home I would make the night before a breakfast casserole and put in the oven ...

Hash browns fried crisp. Crack one egg per person on top of hash. Cover with lid, set to low, and let the steam cook the eggs. Or you can do the hash browns with chopped ham and onion in the skillet. Then scramble up a dozen eggs separately.
