looking for electric skillet breakfast casserole recipe

Here is the issue: We camp with another family so there is anywhere from 9-11 people (adults and teenagers). If I was at home I would make the night before a breakfast casserole and put in the oven ...

I haven't noticed any reason not to use the oven in the summer. It does generate a little "heat", but so does cooking on the stove. Never been a problem for us as the "heat" generally dissipates withing a few minutes with the exhaust fan on. Have you tried it, or are just assuming that it will heat up the inside of the camper to much?
