looking for electric skillet breakfast casserole recipe

We often go RV'ing with another couple and typically do a joint breakfast casserole - fritta one morning - usuallly outside in an electric skillet. We put in some potatoes, onion and cut up leftover meat from the night before, mix up a dozen eggs with some milk and pour it over the meat and potatoes, mix in some cheese and poof its breakfast.
