looking for electric skillet breakfast casserole recipe

Here is the issue: We camp with another family so there is anywhere from 9-11 people (adults and teenagers). If I was at home I would make the night before a breakfast casserole and put in the oven ...

Great ideas, keep them coming! Yes, I could use the oven and yes it does add to heat in the rv with the 100+ temps we have in south TX in the summer. I really like to cook outside for that reason. I have a small toaster oven, electric skillet and grill for my outside kitchen. It really does help keep the rv cooler.
