Mini MEE-loafs

We just finished making individual servings of mini mee-loafs as our grandchildren call them. I use those mini foil loaf pans and individualize the loafs. Some have onion, others don't. Some have garlic and depending on preferences the BBQ sauce topping, Worcestershire topping or plain ketchup topping. After covering their tops in foil I put them on a slow grill to bake for 30-40 minutes depending on the ambient temperature that day.

If the ingredients are set up in separate containers it's easy to assemble an individualized mee-loaf. The kids older than 4 assemble their own using sanitary gloves of course.

    For hamburgers I like have a blend of different meats. The last ones were about 2\3 pork and 1\3 beef. The seasonings were similar to what I listed above but smaller amounts so the burgers stay together on the grill.

    You're welcome. One of my goals in life is to leave my grandchildren with an appreciation for cooking tasty outdoor food. This is a good way for them to pay attention to recipes and how they affect taste.

  • When I make meatloaf here is what I do, DW loves it. Measurements vary by the day.

    In large mixing bowl I put in about
    -2lbs ground beef
    -ketchup
    -mustard
    -soy sauce
    -Worcestershire sauce
    - bbq sauce
    -1 whole egg
    - 1 onion- finely chopped
    -about 1\4 to 1\3 cup quick oats
    -tbsp crushed garlic
    -black pepper
    -salt
    Mix until completely, put into loaf pan and bake at 350F until done. DW likes her ground beef well done, so about 40 minutes.

    We have a meatloaf pan that allows the fat to drain below the meatloaf itself, but mini loaves would work as well.
