Since this is a no refrigerator meal substitute jarred mayo or salad dressing for sour cream. Adding a touch of sirrachi to the mayo gives a nice bit of heat if you like it.
No eggs? Use 1 cup of flour sifted w/ a tsp of baking powder and that mixture will function as a binder. Or just open up a can of cream of celery or mushroom and add a TB or 2 to make the the fritters bind. Just be sure not to add additional salt since the cream of whatever canned goods has a lot.
Always good to keep powdered milk in the pantry for making batters, cakes and such.
