One Pot Meals (?)

This Taco Macis a favorite of ours, although I've never made it while camping. You could size it down for smaller amounts, although it's VERY good as leftovers, almost better! I like it because it doesn't require cooking the pasta in a separate pot, and you can sort of mix and match the ingredients. Like, I often use a can of diced green chiles instead of the pepper mentioned, one less thing to chop. You could also use frozen diced onions so you don't have to chop that either.

Yummmmmm reading! Reminds me of a Portuguese soup made w/ kale instead of spinach who's name eludes me for the minute.

SUPER QUICK PESTO CHICKEN STEW
3 cups chicken broth
2 cups shredded cooked chicken (leftover, deli, whatever -- even canned would probably work)
1 (14 ounce) can Great Northern or Cannellini beans, rinsed and drained
2 big handfuls fresh baby spinach
1/4 cup prepared pesto (I use Classico)

Stir first four ingredients together in a medium saucepan. Cook over medium-high heat until simmering. Reduce heat to medium, stir in the pesto, and simmer for a few additional minutes.

Serve warm, with crusty bread and topped with Parmesan cheese if desired.

Made this one pot dish kind of spur of the minute for the kiddos' camping trip this year:

Pennsylvania Dutch egg noodles

canned tomatoes; yr choice: whole;crushed; stewed or diced

ground meat: use the kind you like best even leftover burger patty, seasoned with garlic and onion powder or Montreal beef seasoning.

yr fav leftover cooked or frozen veggies

Saute meat with a bit of the oil of your choice (my fav is olive oil) and seasoning; push to side of pot when it is no longer pink. Add tomato product w/ enough water to equal amount of noodles you are cooking; you'll find serving sizes and cooking time on package which will also give you liquid amt. 2 minutes before noodles are cooked add cooked vegetables. Follow cooking time for frozen veggies.

Serve with grated/ shredded Parmesan, Romano, or Asiago cheese mixed in.

Another possibility. Been making variations on this dish since I was a teen courtesy of "Abuelita", the much loved by all, Cuban grandmother, of my BGF (her homemade fried doughnuts were also much loved). I make this so often I no longer follow any recipe but found one that gives the basics. Easy enough to scale down to 2 servings by halving the amt of rice and liquid used but NOT the other ingredients. I use whatever green olives I've on hand and find this dish to be a better use for chicken wings instead of breasts or thighs. And if I've neither the seasonings to make yellow rice or the pre-packaged version on hand I just use long grain white rice and Goya tomato sauce and/or beer as the liquid.

Arroz con Pollo

You can make this in one pot by browning the chicken, followed by sauteeing the inions, peppers and garlic next. Add rice, then liquid, and you are good to go in another 20-25 minutes.

Sorry guys, it may be OK for those whose idea of camping is to sit in one spot with hookups for a week, but I don't consider meals with long cook times as being "camper friendly"

There is a cookbook, Microwaving for One and Two, I think. Get something like that. And also standard cookbooks for one and two people but I find it better to make a meal for four and have leftovers the next noon or night.

I have to agree, one pot meals are RV friendly for sure. How about nuking a potato and then adding sour cream, butter, bacon bits, cheese, broccoli.

If you ever have a fire, hobo meals are fun, just get some heavy foil, those pre made hamburger patty, and add cut up veggies, salt, pepper and garlic salt. I also do it with kielbasa, onion, mushrooms, zucchini, red pepper, or just the veggie that you like.

Grilled cheese sandwiches and canned soup.

Go to Costco and get a cooked chicken, you can make a few meals with one chicken. Legs and Thighs for 2 meals. The breast can be used for Chicken Sandwich (Hot with canned gravy) or cold with Mayo and lettuce and if I have it cranberry sauce. If your really ambitions, take the left over bones, boil them in some water and add some tiny noodles and you have cheap chicken soup.

Also, also have you checked out the deli department in large grocery stores. Our Safeway (Vons) has great soups, salads, chicken, asian food

Another thing we often buy, is in the frozen section they have cooked hot wings, and you just nuke them. Serve with carrot and celery sticks

I make my own street tacos. I get a can of black beans, heat it up and season with cumin and chili powder, salt and pepper. Then in a corn tortilla I put some of the beans, and then lettuce, onion, chopped tomato.

The internet is cramp-jam-packed full of web sites for "Dump" style dinners. Just do a Google search. I did a simply "Dump Meals" and ran into 1,010,000 hits.
