I haven't read the comments, but the unit is different than an electric range. an electric range provides the element with current constantly and how much determines the heat. The NuWave doesn't have a heating element, all the heating is done in the utensil bottom. This means the thermostat has to be in the unit itself and under the heating unit. The thermostat will cycle the unit on and off and the effect will effect cooking at times. The effect is more visual than actual most of the time.
Some of the cooking practices I've found lacking are deep frying and frying in pans larger than 10". In deep frying the unit is liable to be shut down just as you drop cold food into it. The end result is that the oil temperature drops too much before the top cools enough to signal the thermostat. In frying only the 9" or 9 1/2" circle will heat in the pan and radiation from this can only go so far out. Remember heat goes up, not down or horizontal willingly.
Aside from the above I can't really fault the unit. Once you learn what the settings will do for you it is very dependable. I find the lower temperatures the most useful. For example you can set it on 200 and sweat onions with a minimum of attention and never burn one.
