I doubt that the cooking ring diameter, 9.5" on the Pro, will be an issue. It has done well with 12' diameter pots. I know nothing about canning so can't offer any info on that particular cooking issue.
Years ago, my mother canned in a large pressure cooker. As I remember, the canning containers were surrounded with water. If that is true, the size of the Nuwave eye will not be an issue. There may be other issues that I'm not aware of.
