Smart move. The fewer gadgets we have to pack, the more room you'll have for carrying necessities.

I bought a GSI hand crank coffee grinder for the camper when we first got it thinking that I'd continue my similar coffee snobbery habits as OP's husband.
GSI hand crank coffee grinder
It works, but I quickly just got into the habit of grinding enough coffee (plus some extra for contingency ;)) with the home electric one before each trip. Then I store it in an airtight container in the TT freezer. It is much easier to deal with that way. I use the propane stove to boil water and use a french press to make the coffee.
In a pinch, I've put whole beans in a ziploc bag and used an empty wine bottle as a roller/grinder to smash up the beans into brewable sized chunks.
I do store a "retired" electric coffee grinder in the TT as well since we use an inverter, but it has never been used.
