Outdoor Cooking at Crater Lake

Staying at Crater Lake, Oregon for several days. I really enjoy outdoor cooking, especially using cast iron camp ovens. I don't really get to do this that often, but really enjoy it when I do.

One of my favorite recipes is Pasta in a Rice Cooker, which I have adapted to cooking in a camp oven.. It has amazing flavor, especially when I add fresh rosemary. It's a family favorite, and there are never any leftovers.

Tomorrow night, my son will be making a Santa Fe Chicken dish that I will help adapt to the camp oven. Good times! :D

  • Garlic, Garlic, Garlic people! I brown the chicken in Olive oil , Garlic and then add 1.5 cups of rice and enough water to cover and let it simmer til starvation sets in and I eat it out of the Castiron. We also love Cheese filled Tortellini with homemade Pesto. My wife is Italian and amkes the Pesto but I am the Chef. Also a salad made with Endive and lettuce, homemade Italian dressing and Olives and Feta.

    They are still selling wood, and you have to special request the fire pit for your site. The Fire Danger sign on the road nearby is pointing to "medium"
  • My son stirring cheese into the Santa Fe Chicken.. Basically it's onions, broth, rice, chicken, salsa, cheese and spices. Very good.
