My family loves canned salmon patties. The secret is to get the skillet and oil really hot, and cook the patties quickly to a crunchy crust on both sides.
For a small can of salmon--drain off about 1/2 the liquid. Flake up the salmon with a fork, and mix with one egg. Crumble up saltine crackers with your hands, keep pieces no bigger than about 1/4". Mix the crackers in with the salmon. I don't count the crackers, but add about 8 to start with. Keep the mixture moist enough that it sticks together well. Then cook in the hot skillet. I use olive oil.
