Pinto bean stew

1 lb dried pinto beans (check for stones and debris).
Soak in warm water for an hour.

While beans soak -
Cut up 1 lb. of smoked beef sausage (we like Eckrich best but others will do well too.) I slice the sausage and then halve the slices so they'll fit on a spoon when eating. NOTE: do not cook the sausage. It will cook in the crock pot.

Drain the soaking water from the beans and rinse.

Put beans in a 6 quart crockpot with 32 oz of chicken stock or beef stock plus 1 cup of water.

Add the sausage and a tablespoon of minced garlic.

Set on high and cook for 4-5 hours (depends on your crock pot brand).

Serve with rice, jalapeƱo salsa, Dave's smoked cheese, chopped onions, Fritos, or whatever makes your gut happy.
  • Follow the quick soak directions (boiling water instead of cold after cleaning and rinsing), add a tablespoon of baking soda or a can of soda or beer, the sausage and a couple of hours later you have sausage/bean soup. Do not pour off the boil water.

    That or go get some Boracho beans and add cooked sausage.
  • We like the monoculture beans instead of mixed beans. All pintos. All navy beans. They cook more evenly than the mixed bag.
  • In the dry bean section of our local grocery there is a 15 mixed bean package that includes a seasoning package. Your grocery may have one also. Like you, we add sausage to it making a great soup. You might check your grocery for a similar bean mix.
