These are favorites around our house and for easy get-togethers.
BBQs, Taverns, Sloppy Joes
Brown 2 lbs hamburger, then drain fat. Add 1 c ketchup and 1 c. Coca-cola. stir well and simmer on low heat, covered, for 15 minutes so flavors marry. Serve on buns. Freezes well. For potluck, keep warm in crockpot.
Ranch Pasta Salad
8 oz. rotini or macaroni, cooked and cooled
2 medium tomatoes, seeded and chopped
1 cucumber, chopped
1/2 cup real bacon bits or finely chopped cooked bacon
1 package Hidden Valley Ranch dressing mix
1 cup good mayonnaise (not salad dressing)
1/2 cup milk
Combine pasta, veggies and bacon in a large bowl. In a medium bowl add dressing mix to mayo and milk, and stir well with a whisk to combine thoroughly. Add dressing to large bowl and stir. Chill for one hour before serving.
Dessert?? Hard to go wrong with mini lemon cupcakes with cream cheese frosting. Line a mini muffin tin with mini cupcake papers. Prepare a boxed lemon cake mix according to directions on the package, and fill each cupcake paper 2/3 full. Bake for 1/2 the time stated on the box for regular sized cupcakes. Cool. For frosting, bring 4 oz cream cheese to room temp in a mixing bowl. Add two Tbsp milk and 2 to 2 1/2 cups powdered sugar. Beat until very smooth using electric mixer, starting on lowest speed. Frost cupcakes and store them in the fridge.
