For potluck, we follow the K.I.S.S. principle. Any pasta dish will do plus whatever veg we have on hand. It all disappears in a hurry and there's never any to take back to the RV.
Italian: noodles + garlic infused EVOO, chopped celery, chopped onion. chopped olives and chopped sun-dried tomatoes, any veg will do, especially frozen broccoli.
Mexican: noodles + enchilada sauce. Add black olives, cumin and chili powder to taste with any veg.
Asian: noodles + soy sauce and sesame oil, and any veg you have on hand.
You get the idea. Pot lucks are about visiting with people, not a cooking competition.
