Potluck winners needed please

Do you have any favorite, simple potluck winners? I would like to have a couple of main dishes, a salad & dessert that I can use repeatedly for the various potluck deals. It has been MANY years since my last venture. This is "new" territory (and I'm not much for cooking)... Thanks!

    Naturally, I like my black bean salad.
    Chop everything the same size as the sweet corn.
  • ICE BOX CAKE

    Ingredients
    2 cups heavy whipping cream or just use COOL WHIP
    2 tablespoons confectioners' sugar
    1 teaspoon vanilla extract
    1 package (9 ounces) chocolate wafers
    Chocolate curls, optional



    In a large bowl, beat cream until soft peaks form. Add sugar and vanilla; beat until stiff. Spread heaping teaspoonfuls on the cookies. Make six stacks of cookies; turn stacks on edge and place on a serving platter, forming a 14-in.-long cake.
    Frost top and sides with remaining whipped cream. Garnish with chocolate curls if desired. Refrigerate for 4-6 hours before serving. Yield: 10-12 servings.

  • Roasted Raspberry Chipotle sauce (Culinary Circle makes one, Costco has another brand...)
    Packaged meatballs or "Little Smokies" (or both) all in a crockpot.
    Heat until hot, serve until gone.
  • My favorite salad that ALWAYS gets good reviews:

    Chopped lettuces in a large bowl (whatever kind you like)
    LOTS of chopped tomatoes
    Parmesan cheese (fresh or out of the green can)
    Texas Garlic croutons.

    Dressing:
    mayonnaise (not dressing)
    Pace Salsa -- medium or hot (mild will be blah)

    Just mix dressing to your taste and pour over the other when you're ready to serve.... (I usually put the croutons on last)....It's YUMMY!!!!
