Pressure cook dehydrated potatoes?

That's what I want to do and can't find any time charts that include dehydrated potatoes....

I'm taking my PC on its first camping trip (even though I haven't room to bring it - will have to keep it in the truck).

I like to make scalloped potatoes using dehydrated potato slices. Usually I just boil them on the stove till they are somewhat soft, drain then bake them up with sauce, spices, and cheese.

Anyone have any ideas on time? I will probably practice before we leave, but I would at least like to have a starting point....

  • The dehydrated hash brown potatoes we use call for equal amounts. This is bulk of course, a cup of the dried potatoes to 8oz of warm water.

  • Thanks for the reply! I went ahead and did some experimenting last night. I tried steaming them in the basket and that did not work - had to throw out some hard potatoes.

    Anyway - what worked was to add lots of water (3 cups) to the potatoes in the pot and PC for 5 minutes, let cool naturally for 2 minutes, then release the steam. I did have to drain the excess water, but that's what I would have to do if I boiled them. Maybe someday I'll get to the point of knowing just how much water to use...
  • I would put the potatoes in the pot and put in boiling water in the amount needed to rehydrate the potatoes. If all of the water is absorbed and they feel hydrated, I would add another half cup, bring to pressure, then turn of the heat and allow the pressure to release naturally.

    You might not even need to allow the pressure to release naturally, since you will be cooking them some more. Try a little both ways before you leave.
