Quick Simple Dinners?

I'm a single traveler, male, 70, and not much of a cook. I can do breakfasts and not much more than hot dogs or chili pie. Since I can't always plan to be where I can get dinner out I need a few simple meals that I can just quickly throw in a pot or pan and heat or cook simply. I have a 12v electric fridge but not a freezer. Things I could prep before a trip, possibly freeze and then put in the fridge just before departure would be great. An example might be putting corned beef, cubed cooked potato and onions in a container. Suggestions?

  • I cook for two. My pot of Chili made in a Rice Cooker (from cans of things in the pantry and ground beef) keeps for quite awhile in the refrigerator. First night is chili w/crackers. 2nd night soft tacos, 3rd night soft tacos rolled and heated in the oven with can of Enchilada sauce poured over the top.

    Sometimes, I reheat a small amount and tacos for Lunch, too.

    I full time and eating out gets old real fast.

    Once a month I find a CG I really like and stay for a few days.
    This is the stop that I set up and take my time and make chicken soup, chilli, noodles and red sauce and some sort of stew.

    I then put them into containers and freeze them. It is SO nice to just pop one into the micro or a pot and have a nice healthy home made meal in just minutes when ever I want. Even a quick stop at a rest area I can still have a nice hot meal before heading back out on the road.

    I bought one of these camping stoves. Can put 2 big stock pots on at same time. Stove folds up flat for easy storage.


    In your case if you made them at home and froze them they would take a few days to thaw out and then after they thaw out they would still be fresh to eat for several days. That would take you out a couple of days with prepared food.

    You should look into those small electric fridges that "have a freezer". They are inexpensive. And there are always quite a few for sale cheap on Craigslist. I just bought a real nice mid size one with a good size fridge for $85 stainless steel front and all!

    If you have to watch your sodium intake (as I do), choose your prepared foods wisely. Learn to read the nutrition labels. You'll be shocked at how much sodium is hidden in foods.
  • At the grocery store they have what is called "sides" Knorr makes a few different ones. For instance under rice sides Cheddar and Broccoli lots of different ones easy to cook. Usually finds these things in store where you get rice and stuff. You can add anything to them. Example before you leave home cook some ground beef, drain off any grease, put in Baggie and place in ref. on the road take out one of your sides, cook that. Add ground beef and your sitting down to a nice dinner. You can get rotisserie chicken at store. Cut up what you want, freeze the rest ( at home). Bag up what you want to take and cook one the little bags of "sides" mix and match. Lots of stuff to choose from. Do you like Mexican ? Buy tortilla chips, salsa, sour cream, shredded cheese have your hamburger ready to go. Put chips on plate add warmed up hamburger, put on some salsa , cheese, sour cream you have a little fiesta going. There are boxes of things like Alfredo you cook on road, take along a few shrimp you prepare at home and it's Seafood madness night. Keep in mind you can't keep even cooked food in ref for long trips, but you can get canned shrimp, that will keep for a long haul. Hope these ideas help!
  • The only dinner my husband can make is BLT sandwich with a fried egg. He does top it off with tabasco sauce. In fact its one of his favorite meals, LOL.
  • Get a crock pot some small red potatoes (cut in half or just dump them in), baby carrots, cut up some onions, 2 lbs stew beef (you can get this already cut at the store) cut in pieces, beef soup, cream of mushroom soup. (two cups of red wine goes well also, one for the stew and one for the cook) Put it all in crock pot and cook for 6 hours on low. Let cool, and fill several Tupperware containers freeze and take with you. Then get some Boil in Bag rice and make the rice and serve with the thawed and heated stew.
  • Add a few chicken breasts and a can of cream of broccoli & cheese soup. Throw this in the oven @ 350 for 45-60 minutes. This is a staple when we camp, eat it once every trip.
