I'm going to let you all in on a little secret that I learned about mashed potatoes while eating with an Amish family in Pa.. You have to slightly brown the butter before adding it to the potatoes. Do not brown the butter too hard or it can make the potatoes taste salty. Those mashed were the best I've ever had, and with my Russian (Ukrainian) heritage, that's saying something.
