You could also try leaving out the yeast, mixing, and allowing to rise overnight, to rest overnight. It is a good way to get that great sourdough flavor. It should work like no knead bread. It will get bubbly on top.
Flour the dough lightly and turn out on the board, do a couple of flip and folds to tighten it up, adding flour as needed. Put in an oiled bowl and allow to rise. Once about double, gently shape, and bake.
