Salmon - Tonight's dinner

Put some salmon in the brine this morning before work for tonight's dinner. Just before it goes in the smoker I also add some rub.


My special finishing glaze of brown sugar, honey and maple syrup.


Ready for the table.


Served with fresh green beans and Saffron rice.

    Real maple syrup is made with 100% maple not flavored sugar syrup.
    I prefer grade B for cooking.

    It serves 2 purposes. In true smoking, the brine is the preserving agent that makes smoked fish last a long time, something that I've never had long enough to actually utilize. The other thing it is good for is as a marinade. I use soy sauce, apple juice, garlic & brown sugar as my brine. The rub I use adds a little bit of heat/spice. I'm a big fan of the sweet provided by the glaze.
