shopping for pots and pans

Check the Yellow Pages for "restaurant equipment and supplies". Prices are a lot better and the equipment is a lot sturdier, with thicker bottoms. Whatever you're taking in an RV is going to be subjected to bouncing around. They also have a wider selection of sizes. A lot will have metal handles, but that's what they make hot pads for.
When it comes to Teflon coated skillets, you might just as well buy cheap ones. Love may be forever, but Teflon isn't.

We switched to the Magma nesting cookware set (10 piece) three years ago and have been very pleased with their durability and the amount of space they take up. Made of stainless steel they will last many years.

Google Guardian Service Aluminum cookware. Last produced in 1956 and was advertised as waterless , low to medium heat. I still find good pieces with metal lids. I stack them and they work well. Best cooking pots you will find. Use them on any burner or surface.

A suggestion. Get a set that is enamel. Food doesn't pick up metal taste and clean easier. Have to handle a little easier to keep from chipping.
Wife has a real heavy stainless set Inkor with a solid 1/4 inch or so metal base. She is well please with them. The handles haven't degraded or turned rough of course they don't go in the dishwasher.

We use cast iron fry pans and put blue paper shop towels between them. Our pots are the old copper bottom Revere that don't have a non stick surface, and apparently don't need it.

You got too much stainless. The SS that a magnet will stick too is generally a bottom piece covering an aluminum flat and is 18/0 and heavy with carbon steel.

Take a magnet with you when shopping if you are going to use induction, if the magnet sticks it will work if it doesn't they won't .

But...is right. Shipping was over $43. :E I think I'll pass, but thanks for looking for me. :) I don't really care for the weight of cast iron. I have some in the stick house, but DH likes it if I keep things lighter in the rv. I'm seriously looking at the Magma induction set, just trying to figure out if the 7 piece set will be enough.
