Simple ideas for healthy, lower carb meals?

We need to start eating healthier, but don't want to go to a lot of trouble... I am trying to avoid pasta, rice & bread mostly. Suggestions?
  • At first it will be a bit of trouble. The Internet is your friend. My wife finds good low carb recipes all the time. Once you stop eating the processed carbs you'll lose your desire for them. Then it gets real easy.
  • A protein/vegetable/dessert meal works for us. The old bait & switch, carb for a sugar-free dessert works every time. Could be yogurt, fruit & cottage cheese, or SF pudding. It's all about the anticipation of something sweet to end a meal that he doesn't realize he missed his carb altogether.

    I've used them in Asian cookery nicely but would like to incorporate them in other styles of cooking too.
  • they now have the mashed cauliflower in the freezer section at some grocery stores. Green Giant brand I think.
    Google South Beach recipes.
    Make chili without the beans.
    Hamburgers using lettuce leaves instead of buns.

    Started cutting back on carb meals a good 15 years back.

    Mashed cauliflower to replace mashed taters when the want overcomes. You can cream cheese it with total ease. When I serve it at large gatherings few realise it's not potatoes.

    Lettuce wraps replace any form of bread oftimes on my end.

    We eat more veggies of various textures at meals to replace the "starch".

    When traditional high carb meals are served like pasta casseroles I use less pasta and more vegetables and make the carbs count by putting a bit more effort to the dish in the form of risottos, paellas, and pilafs.

    Run summer squashes through the food processor's blades to make thin or thick ribbons as a pasta substitute that will hold up to a delicate or hardy sauce.

    "Mile high" 1/2 sandwiches made with one slice of bread..oftentimes black pumpernickel or multi grain.

    And yes to happynow's suggestion to utilise more spices and herbs. great non processed food taste.

    So far have never found a nationally available low carb pasta with the mouth feel of say Ronzoni's but still hoping.

  • Google 'Glycemic Index', you will get lots of ideas.
  • We use "Mission Carb Balance" tortilla's and green leaf lettuce for wraps, taco's etc. Spices instead of sugar laden marinades or sauces.
