Sous vide New York steak

Using a relatively inexpensive but extremely precise immersion circulator, we used the sous vide technique to make the perfect steaks.

The recipe is simple:
  • Steaks of your choice
  • Seasoned to your liking
  • Set temperature to your choice, 120F is rare
  • Set timer for 2 hours
  • Sear when finished for perfect brown crust


Sous vide makes cooking simple because you can never ruin the meat - because you set the temperature of the water bath to a precise level, the meat will never dry out or over cook.

We use the Anova device

    No kidding...and note that if you want the already cooked steak to look "grilled" with the sous vide method, you have to pan-or-otherwise-sear the outside anyway!

    Start 2 hours before dinner.

    I made one about a year ago ( you can do a search on this forum to see the comments) The good thing is that you can leave it in longer if you want and it will not overcook. I don't use it a lot, but do like the results. Plus, I can throw something in, go out and do whatever I want, come back, heat up the grill, sear it for a minute or 2 and it's ready to eat.

    Double ditto. For camping, I cannot see where sous vide would be pragmatic.
  • You can Google it - cost is somewhere around $200.00 - time cooking is way too long and I would never walk away from my camper with anything cooking!!!!

    If it works for the OP - good for them, just would not work for us!

  • Perfectly cook steak... Cooked any more and it would be overcooked and chew like shoe leather.
