This is a neat post, I have read so much stuff here but this post needs an Old Timers (really old) comment. The cost comparison isn't necessary because there wasn't any cost consideration when buying food in 1943 to 1946. If there was food available Mom and Dad would buy what was available and as much as possible. It wasn't necessarily a good deal then, it was pretty much the only deal available.
Nobody seems to mention Alaska when talking about per capita consumption. My two favorite states to visit(and I would like to live in, not DW though)are HI and AK and they are number, 1 and 2 in consumption.
I thought the comparison of HC's chicken with chemicals was an great answer to the uninformed post regarding what Spam is made of.
Our SIL will not stay in the same room with Hotdogs, bologna or Spam, he says they are all made of lips and a$$holes". His daughter and son, however, like it cooked several different ways, mostly while we're camping. We do have it grilled when they stay with us.
One of my favorite dinner memories from the 40's were having Spam cooked with orange marmalade on top and baked in the oven.
We do use the low-sodium stuff and we don't seem to be suffering.
