Actually the nitrite is the preservative, along with the salt and sugar and with the exception of the binder, all are also the main ingredients of ham. I don't know what your Spam looks like, but mine ain't red.:B
I liked the half cans when I did a lot of river camping. No refrigeration required. Fry some of it for breakfast and eat the rest for lunch and nothing left over.
