In a big frying pan (or electric skillet) break up cabbage like you are making a salad, with a little oil, sliced up onions, pepper and salt. Doesn't take long to cook, and reduces incredibly, so don't be afraid to overfill the frying pan.
Very diet friendly for almost any diet.
You forgot the sugar and vinegar.:B
OK, so it is not so much fried as "sauteed." I include cabbage in stir-fry all the time. I was thinking "breaded and deep-fried".
