Squirrel cooked with Orange juice
Hunting season is upon us and here is one of my favorite recipes, even my squirrel dogs like it too.
5 fresh cat squirrels cut into quarters and backs, place in pressure cooker with a qt. of orange juice and a quart of water. pressure them for 20 minutes.
Remove meat from the liquid and cover them with Italian dressing, steak seasoning, place them on the grill for (about 160 deg) for 1 hour re-coat them at about halfway and re-coat them at this time. Delicious flavor of the dressing and the orange juice and as tender as any meat can be, everyone always enjoys this recipe
