steak & beer - HELP

Read a grilling recipe a while back but can't find it now. I have some nice strip steaks and the recipe called for a marinade made with a strong beer. Anybody have an idea??? I need it for tomorrow night.

  • 3 dog is that Sams Winter you have stashed? My wife marinadeds with soy sauce,worchester,salt,pepper,onion and garlic powder. Sometimes she melts butter into this mixture. I would not go punching a bunch of holes in the meat as you will let the juices run out during grilling. We have a vacuum sealer(seal a meal) that has a marinating bowl that we use when we marinate things. Man what a difference it makes. A sealing bag can also be used if there is no bowl. The Ziploc bag is probably the next best thing and will work just fine,better than filling the steak full of holes. Old-Biscuit that is some good basic info,sounds like Alton Brown from the food network. Let us know how it turnes out and "good eats".
  • OK, after researching this I've concluded 2/3 cup of sweet BBQ sauce mixed with 1/2 cup of a local amber. punch a couple of hundred holes in the meat with a fork and let sit all day in the mix. Wipe off before grilling, reduce the left over sauce and brush on just before removing from the grill. Anxious to try, will report results. Thanks to all!
  • Guiness makes a good marinade. Miller Lite ice cold is terrific in the hot Summertime. Light and cold!
  • good quality steak should need nothing more than salt and a little black pepper ;)

    I concur on the acidic fruit, need some acid to break those proteins down rosemary's always good with beef too.

    when you take the steaks off, be sure to let them rest, could put a pat of butter on as they rest.

    good choice sticking with the porter or the stout, if it were me, I would add a little Worcestershire and it may sound strange, but a fruit of some kind like pineapple or oranges, something to reduce the bite. the other option would be to add some brown sugar to it and skip the Worcestershire.

  • Sam Adams Boston Lager is a good beer that is on the heavier side but is not too hoppy(bitter).Sam Adams Octoberfest is a good smooth beer too but it is seasonal. The best beers for this use will be lagers,porters or brown ales as IPA ales tend to be too hoppy and summer beers(shandys and the like) are too light or citrusy. Nothing better than steak and beer. Find something you like and you can drink the other five.
