Sunday Dinner

I was in the mood to smoke something this weekend so I started rifling through the freezer to see what might be a candidate. I found this prime roast that needs to be consumed. I rubbed it with some garlic infused oil olive and then put a beef rub on it consisting of kosher salt, pepper, garlic powder, onion powder and an off the shelf Porterhouse steak & roast rub. I'll let it set for about 4 - 5 hours and go to the smoker with it.

  • After 20 minute rest, I had to cut into it. BTW, I pulled it off at 138 IT.

  • If this doesn't make your mouth water, nothing will! Just came out of the smoker and now some rest time.

  • I just made an experimental horseradish & garlic cream sauce that tastes pretty darn good for not having a chance for the flavors to fully marry. I started like I was making my garlic aioli and then added enough horseradish to just burn my tongue. I'm excited about dinner and I haven't even had lunch yet.
