I always roasted a turkey in the oven with the dressing done separately. Cranberry Celebration, candied sweet potatoes, mashed potatoes, another veggie or two plus fresh hot rolls. That was the main meal with pumpkin and one other type of pie for whoever came over. Now that I'm not doing a big family meal for siblings and their families, its a little different. It will be a Rachael Ray recipe for the turkey that I tried a couple of years ago and we loved, with everything else scaled down. Here's the recipe and she used only the breasts when the show aired, I think.
Directions1. Position a rack in the upper third of the oven and preheat to 400 degrees . Arrange the turkey parts (two breasts and a leg) on a rimmed baking sheet, tucking the smaller end of each breast under to make an even thickness. Drizzle with the olive oil and season with the thyme, salt and pepper. Place the lemon halves, cut side down, in the pan. Roast until a meat thermometer inserted in each piece registers 155 degrees , about 55 minutes.
It was fantastic! At one time, for about 15 years, I fixed an entire Thanksgiving dinner with two burners and a toaster oven because we didn't have a stove. When we built our log home, I made sure I had another JennAire stove and its been wonderful. Our motorhome has a two burner stove and a large microwave/conventional oven that the upper coils don't work. We also have a toaster oven that the upper coils don't work on. Yesterday I went out and bought a larger Farberware toaster oven that even has a rotisserie in it for $49.99.
