That empty pantry
Last night I stared into an empty pantry and realized we had not bought groceries in two weeks because of scheduled committments.
We did have a pound of ground round so I rustled up inspiration from SOS.
1 lb of ground meat.
1 small can of mushrooms.
1 shriveled poblano pepper.
1 small onion.
Chopped the pepper, onion and mushrooms and browned them in the cast iron skillet in a TBSP of olive oil.
Turned the heat to low. Removed the above items and tossed in about 1 1/2 TBSP of flour to cook and brown slightly. Added milk slowly while stirring to create a gravy. Pitched everything back into the skillet to stay warm while the rice cooked. Topped the rice with the savory meat gravy.
Opened a can of turnip greens and nuked them with a dash of sesame oil.
Not too shabby. Empty pantries can be a source of creativity too.
Heading out the door to do the shopping today.
