Don't let your potatoes sit in the water after they are cooked, they will taste bland and watery,
After they are boiled drain in the pan then put the lid on tight and give the pot a couple of good shakes.
I then mash by hand adding butter and milk a little at a time. After they are mashed rather well set the pot down and then use the masher like a whisk and whip the potatoes.
Now for something different....put your finished potatoes in a glass bowl and very lighty put a little bit of butter all over. I repeat, very lightly and a little butter. Place in the oven and broil the top until you have a light crispy crust.
The kids love that crispy top and finding super smooth potatoes underneath. Adults do too!
