I twice bake. Bake on the grill for 1 1/2 hrs. Scoop out into 13X9, you will need at least two to serve 30. Add onion, bacon bits, salt and pepper, real butter and small pieces of the potato skin. Mix that all in and oven bake at 350 for 45 minutes. Fluff up and cover with cheese. I let the guest add more bacon bits, chives sour cream to their liking.
You could also have a brown gravy on the side for those who prefer that. Can't go wrong with McCormick's.
On Edit: I have actually had success twice baking instant mash potato's. You might consider that if you don't want to buy 40-50lbs of potato's. Cook as directed on the box and then oven bake as above. This required a longer bake to draw out the moisture.
